Tricia and I dine out often on the weekends, but breakfasts at $20 or more per person can really add up over time. Enter the homemade poached egg sandwich.

The Skinny

Since we have a few trips planned we thought we’d offset some of our upcoming expenses by spending less mornings out, and more mornings in. She likes to cook: she’ll browse healthy recipes the day before or the morning of and take a few ideas from this one, and a few from that one, and really make the dish her own.

And me? I like to eat.

How to Make a Homemade Poached Egg Sandwich

Here’s a simple recipe for how to make a homemade poached egg sandwich with red potatoes, one of our main-stays. It’s super easy on the budget, and with little (elbow) grease you’ll have a delicious meal on your table in less than 30 minutes.

Sandwich Ingredients

  • Rye Bread (toasted)
  • Avocado Ranch Dressing (spread)
  • Roasted Turkey (browned)
  • Cherry Tomatoes (halved)
  • Eggs (poached)
  • Salt and Pepper (to taste)

Potato Ingredients

  • Red Potatoes (finely diced)
  • Olive Oil (sprinkled)
  • Salt and Pepper (to taste)

Tricia’s tip: poach eggs in the oven for a flawless result every time!
